Hatton Bank

Hatton Bank, a large underwater fishing ground located in the Northeast Atlantic (FAO area 27), is a highly valuable fishing environment. It is geographically located about 500 km west of Ireland and the United Kingdom. Its cold and deep waters are home to important demersal fish stocks of high commercial value. This area is strategic for the European fleet, which employs advanced technology to ensure sustainable fishing and immediate conservation of the fish on board.

Wild Fishing and Deep Freezing in the High Seas

Our catch comes from wild fishing, a method that respects the ecosystem and ensures the authenticity of the product. The fish lives and develops in its natural habitat, which guarantees a product with the highest nutritional and organoleptic quality. To preserve its freshness, it is frozen immediately after being caught, using quick deep-freezing techniques at approximately -40ºC.

This process not only prevents bacterial proliferation, but also keeps essential nutrients such as Omega 3 fatty acids, proteins, vitamins and minerals intact. It also contributes to food safety by eliminating possible parasites such as Anisakis.
